What Is Gluten?

Gluten is a protein found in wheat, barley, rye, and other grains. It is commonly found in bread and pasta. It is referred to as naturally occurring “glue” when it is mixed with water. Gluten has the ability to help foods maintain their structure. Gluten is highly elastic and resistant to protease enzymes which break down protein in the stomach. Gluten provides no essential nutrients. There are two types of gluten: Glutenin & Gliadin.

Who Should Avoid Gluten?

Many people in society can not digest gluten. Hence people have started to consume gluten-free diets. Wheat is a major part of our diet. The seed of wheat contains a large amount of gluten and other protein that our body can not digest. There are some health issues which are linked to gluten protein:

Celiac Disease:

It is an autoimmune disorder. When a Celiac disease person consumes gluten-containing food the immune system reacts and it causes damage to the small intestine. If a person having celiac disease consumes gluten, they face the symptoms of Bloating, Diarrhea or crampy abdominal pain.

Wheat Allergy:

Usually, wheat allergy occurs in children. It happens when the immune system misidentifies wheat protein as a pathogen. In wheat allergy, wheat protein causes illness immune response to a specific protein in wheat and wheat products. Symptoms that occur in wheat allergy are difficulty in breathing, skin rash and running nose.

Non-Celiac Gluten Sensitivity:

In this population, there are some people who don’t have celiac disease or an allergy to wheat. That person can be diagnosed if they don’t have either of the conditions NCGS (Non-celiac gluten sensitivity) experiences the symptoms like headache, fatigue and joint pain when they consume gluten.
